Spicy Mexican Recipes
Mexican food is famous throughout the world as a spicy exciting cuisine, always accompanied by a cold beer and maybe a few shots of tequila. Like the landscape and the culture, so the food of Mexico also varies greatly from state to state, each area putting their own special touch to traditional dishes and adding new ones as well. Mexican recipes often blend many influences together, from the Orient to the Mediterranean and beyond.
Spicy Mexican Dip
1 - 19 ozs can red kidney beans, drained
3 tbsps fresh lemon juice
1 tbsp soya sauce
1/3 cup tomato sauce (or tomato paste for a thicker dip)
2 cloves garlic, chopped
1/2 cup fresh basil (or 1 tsp dried basil)
1/2 tsp oregano
1/2 tsp cumin
1/2 tsp chili powder
1/2 cup white or vidalia onion, chopped
In a food processor, blend all the ingredients into a puree. Refrigerate for at least 1 hour before serving to blend flavours.
Serve with tortilla, nacho or taco chips.
1 whole chicken, boiled and off the bone in bite sized pieces. You can use whatever chicken pieces you have...a great use for leftover turkey!
1 pound cubed velvetta cheese
1 can cream of chicken soup
1 can cream of mushroom soup
1 can rotel tomatoes/green chilies
1 "normal" size bag of tortilla chips
approx 1 cup chicken stock
salt & pepper to taste
Crush entire bag of chips! They smaller the better.
In a large bowl, mix all ingredients except chicken stock.
Place in a 9x13 baking dish.
Pour stock over entire dish.

top with chopped black olives, salsa, or cheddar cheese
Cover and bake at 350 deg for approx 30 to 45 minutes.
